Heirloom Radishes, Anchovy Butter & Sea Salt Serves 6

1 pound assorted radishes
¼ pound butter 4 anchovy filets, chopped 1 tablespoon minced shallots 1 tablespoon lemon juice 2 tablespoons chopped parsley 1½ tablespoons grey sea salt
Clean and trim radishes in cold water. Combine butter, anchovies, shallots, lemon juice and parsley in a food processor. Blend well. Serve radishes with a side of anchovy butter and a side of sea salt.
